Peanut Butter Biscuits
Ingredients
- 1 cup smooth peanut butter
- 125g unsalted butter
- 4 tbsp (1/3 cup) honey
- 1/2 cup (80g) lightly packed brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1 1/2 cups (225g) plain flour
- 1/2 tsp bicarbonate of soda
- 1 cup honey-roasted peanuts, chopped, plus extra whole peanuts to garnish

Preheat the oven to 180°C. Line a baking tray with baking paper.

Place peanut butter 1 cup smooth peanut butter, butter 125g unsalted butter, honey 4 tbsp (1/3 cup) honey and brown sugar 1/2 cup (80g) lightly packed brown sugar in the bowl of an electric mixer and beat for about 2 minutes until pale and fluffy. Add the egg 1 egg and vanilla 1 tsp vanilla extract and beat until combined. Beat in the sifted flour 1 1/2 cups (225g) plain flour and soda 1/2 tsp bicarbonate of soda, then add the chopped peanuts 1 cup honey-roasted peanuts, chopped, plus extra whole peanuts to garnish and stir through.

Flour your hands and roll the mixture into 2.5cm balls. Place on the baking tray, allowing room to spread, and flatten slightly. Place a whole peanut in the centre of each biscuit and bake for 8 minutes until cooked and lightly golden. Turn out onto a wire rack and allow to cool completely.
