Grilled ginger pork sausages & cabbage salad
Ingredients
- 600g pork mince
- 2cm piece fresh ginger, grated
- olive oil cooking spray
- 225g can pineapple rings, drained, halved
- 2 cups shredded green cabbage
- 1/2 small red onion, finely chopped
- 1/2 cup marinated red capsicum strips
- 2 tbsp mayonnaise
- 4 pita breads, warmed, quartered

Place pork and ginger in a bowl. Season with salt and pepper. Using hands, mix to combine. Using 1/4 cup mixture at a time, shape mixture into eight 8cm-long sausages.

Spray a barbecue plate or chargrill with oil. Cook sausages for 10 to 12 minutes, turning occasionally, or until cooked through. Add pineapple. Cook for 1 minute each side or until heated through.

Meanwhile, place cabbage, onion, capsicum and mayonnaise in a bowl. Toss to combine. Serve sausages with cabbage mixture, pineapple and pita breads.
