Easy Cornmeal Fried Shrimp
Ingredients
Shrimp & Oil
- 1 1/2 pounds medium- to large-sized shrimp, deveined
- Vegetable oil, for frying
Batter
- 2 cups milk
- 1 large egg, beaten
- 1 cup all-purpose flour
- 1 cup cornmeal
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt, plus more for sprinkling
- 1 dash freshly ground black pepper

Heat about 1/2 inch of vegetable oil in a large, heavy skillet over medium-high heat.

In a shallow dish, combine the milk and egg, whisking to blend.

In another shallow dish, combine the flour, cornmeal, baking powder, salt, and pepper.

Dip each shrimp in the milk mixture, then dredge in the flour mixture, pressing to coat.

Fry the shrimp in batches for about 2 to 3 minutes per side, until golden brown and cooked through.

Drain on paper towels and then move to the rack on the baking sheet. Place the pan in the oven to keep them warm while you fry the remaining shrimp.
