Easy Coconut Prawns
Ingredients

- 24 medium green prawns
- 2 tsp peanut oil
- 1 onion, chopped
- 1 garlic clove, chopped
- 1 tsp finely grated ginger
- 1 small red chilli, finely chopped
- 1 tsp curry powder
- 400ml can coconut milk
- Torn fresh basil leaves
- Steamed white rice, to serve

Bring 1 cup (250ml) of water to the boil in a saucepan. Add the prawns. Reduce the heat to low. Cover and simmer for 3-5 minutes or until the prawns are cooked through. Transfer the prawns and water to a bowl. Set aside to cool.

Remove the prawns from the water. Reserve the water. Peel and devein the prawns. Return the shells to the reserved water.

Heat the oil in the saucepan over a medium heat. Add the onion, garlic, ginger, chilli and curry powder. Cook, stirring often, for 2 minutes or until golden and aromatic.

Strain the reserved water into the saucepan and discard the shells. Add the coconut milk. Bring to the boil. Reduce to low and simmer for 10 minutes. Stir through the prawns and basil. Serve with the rice.
