Easy Choc Chip Cookies
Ingredients
- 250g unsalted butter, softened
- 3/4 cup caster sugar
- 3/4 cup (firmly packed) brown sugar
- 1 1/2 tsp vanilla essence
- 2 eggs
- 3 cups plain flour
- 1 cup mini choc chips (or sultanas and currants)

Pre-heat oven to 160C

In an electric mixer, beat butter and sugars until light and fluffy.

Add vanilla and eggs on a low speed until combined

With machine off, add flour. Then slowly start machine, increasing until the flour is combined with wet ingredients.

Add chocolate chips (or sultanas) and mix in.

When they are evenly distributed, take small amounts and roll into a ball quickly, then place on tray with baking paper on it. in batches of 12- 15 at a time, flatten slightly and space them with room to spread.

Place in pre-heated oven for between 18-20 minutes until golden brown.

They will be soft in the centre, and crisp on the base.

Cool on a wire rack.

Will keep in an air tight container for up to a week (if they last that long!)
