Ingredients
Cake
- 1 (18.25 ounce) package yellow cake mix
- 1 (3.4 ounce) package instant vanilla pudding mix
- 4 eggs
- 1 cup vegetable oil
- 1 cup water
Topping
- 1 (7 ounce) jar marshmallow creme
- 1 cup chopped pecans
- 1 (3.5 ounce) package instant vanilla pudding mix
- 1 (8 ounce) container frozen whipped topping - thawed
- 1 (14 ounce) can sweetened condensed milk
- 1 cup flaked coconut
Instructions
- 1
Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking pan.
- 2
In a large bowl, combine the cake mix, instant vanilla pudding mix, eggs, oil, and water. Beat on low speed for 30 seconds, then on medium speed for 2 minutes. Pour the batter into the prepared pan.
- 3
Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely in the pan on a wire rack.
- 4
In a medium bowl, combine the marshmallow creme, pecans, instant vanilla pudding mix, whipped topping, sweetened condensed milk, and coconut. Mix well. Spread the topping over the cooled cake.
- 5
Place the cake under the broiler for 2 to 3 minutes, or until the topping is golden brown. Watch carefully to prevent burning.
- 6
Let the cake stand for 30 minutes before serving. Store leftovers in the refrigerator.
