Crisp Asparagus & Butter Beans
Ingredients
- 750g butter (yellow) beans, topped
- 2 tbsp extra virgin olive oil
- 3 bunches (about 700g) asparagus, ends trimmed
- Salt & freshly ground black pepper

Bring a large saucepan of salted water to the boil over high heat. Add the beans and cook, uncovered, for 3 minutes or until tender crisp. Use a slotted spoon to transfer the beans to a colander and drain well. Place in a serving bowl or on a platter. Drizzle with 1 tablespoon of the oil and cover with foil to keep warm.

Return the water to the boil. Add asparagus and cook for 2 minutes or until bright green and tender crisp. Use a slotted spoon to transfer the asparagus to the colander and drain well.

Place the asparagus on top of the beans and drizzle with remaining oil. Season with salt and pepper. Serve immediately.
