- olive oil cooking spray
- 8 thick slices wholemeal bread
- 1/4 cup Dijon mustard
- 250g thinly sliced corned beef
- 8 gherkins, thinly sliced lengthways

Preheat a sandwich press.

Spray oil olive oil cooking spray over 1 side of 4 slices of bread. Place onto a flat surface, oil-side down. Spread half the mustard 1/4 cup Dijon mustard over bread slices.

Top with corned beef 250g thinly sliced corned beef and gherkins 8 gherkins, thinly sliced lengthways. Spread remaining mustard over remaining bread slices. Sandwich together. Spray with oil.

Place sandwiches, 2 at a time, into sandwich press. Cook for 6 to 8 minutes or until golden and crisp. Serve.
