Corn and Edamame Succotash
Ingredients
- 3 tablespoons unsalted butter
- 1 (14-ounce) bag frozen corn
- 1 cup frozen shelled edamame
- 1/2 cup jarred sliced roasted red peppers
- 1 teaspoon Cajun seasoning, more to taste
- Salt, to taste
- 3 green onions, sliced or snipped with scissors

Sauté the frozen vegetables - Melt the butter in a medium sauté pan over medium-high heat. Add the frozen corn and edamame and sauté, stirring frequently, until they are heated through, about 4 minutes.

Add the peppers and seasoning - Add the peppers and Cajun seasoning and cook, stirring frequently, until heated through, about 2 minutes. Taste and add more Cajun seasoning and salt to taste, if desired.

Finish and serve - Remove the pan from heat and stir in the green onions. Serve immediately.
