Cod, potato and spring onion stew
Ingredients
For the stew
- 2 tbsp olive oil
- 2 spring onions
- 500g new potatoes, scrubbed
- 100g smoked bacon, diced
- 200g cod fillets, skinless and boneless
- 400g tinned cherry tomatoes
- 100ml fish stock
- 100ml double cream
- 1 lemon, juice only
Instructions

Heat the olive oil in a large, high-sided pan over medium heat. Finely slice the spring onions and add to the pan, cooking for 2-3 minutes until softened.

Add the new potatoes and bacon to the pan, cooking for 5-7 minutes until the potatoes are slightly tender and the bacon is crispy.

Cut the cod fillets into 2.5cm chunks and add to the pan with the cherry tomatoes and fish stock. Bring to a simmer and cook for 5-7 minutes, or until the cod is cooked through.

Stir in the double cream and lemon juice, then season to taste. Serve immediately.
