Fabulous fish stew
Ingredients
For the stew
- 2 tbsp olive oil
- 2 onions, finely chopped
- 4 cloves of garlic, crushed
- 1 red chilli, finely chopped (optional)
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper (optional)
- 1 fennel bulb, finely chopped
- 2 carrots, peeled and finely chopped
- 2 celery sticks, finely chopped
- 400g cherry tomatoes
- 1 tbsp tomato purée
- 1 litre fish stock
- 200g potatoes, peeled and diced
- 200g firm white fish fillets, skinless and boneless, cut into chunks
- 200g salmon fillets, skinless and boneless, cut into chunks
- 200g mussels, scrubbed
- 200g king prawns, peeled and deveined
- a small bunch of parsley, chopped
Instructions

Heat the olive oil in a large, heavy-based pan over medium heat.

Add the onions, garlic and chilli (if using) and cook until softened, about 5 minutes.

Stir in the paprika and cayenne pepper (if using), then add the fennel, carrots and celery. Cook for another 5 minutes.

Add the cherry tomatoes and tomato purée, then pour in the fish stock. Bring to a boil, then reduce the heat and simmer for 15 minutes, or until the potatoes are tender.

Add the white fish and salmon and cook for 3 minutes, then add the mussels and prawns. Cook for another 3-5 minutes, or until the mussels have opened and the prawns are pink.

Discard any mussels that don't open.

Stir in the parsley and serve immediately with crusty bread.
