Churros waffles with fudgy chocolate sauce
Ingredients
Waffles
- 2 eggs, separated
- 1/4 cup milk
- 100g butter, melted
- 1 tsp vanilla extract
- 1 1/3 cups self-raising flour
- 2 tbsp caster sugar
Cinnamon Coating
- 3/4 cup white sugar
- 1 tsp ground cinnamon
Fudgy Chocolate Sauce
- 200g milk chocolate, chopped
- 2 tbsp brown sugar
- 1/3 cup thickened cream

Preheat oven to 150C/130C fan-forced. Place a wire rack over a large baking tray and place in oven.

Make Fudgy Chocolate Sauce: Place chocolate, brown sugar and cream in a saucepan over medium heat. Cook, stirring, for 5 minutes or until melted and smooth. Set aside for 5 minutes to cool.

Meanwhile, preheat waffle maker following manufacturer's directions.

Whisk egg yolks, milk, butter and vanilla in a bowl. Add flour and caster sugar. Whisk until almost smooth and combined. Using an electric mixer, beat egg whites until stiff peaks form. Add 1/4 of the egg white to the batter, folding to combine. Add remaining egg white. Fold to combine.

Half-fill the waffle maker with batter. Close lid. Cook for 1 minute 30 seconds or until golden and cooked through. Transfer to wire rack in oven to keep warm. Repeat with remaining batter.

Remove waffles from oven. Combine white sugar and cinnamon in a dish. Toss each waffle in cinnamon mixture to lightly coat. Serve with chocolate sauce.
