Chocolate Rum Raisin Puddings
Ingredients
- 1/3 cup rum
- 2/3 cup raisins
- 100g butter
- 1/2 cup brown sugar
- 1 tsp vanilla essence
- 2 eggs
- 1/4 cup cocoa powder
- 1/4 cup plain flour
- 3/4 cup self-raising flour
- 1/4 cup milk
- 100g dark chocolate, chopped
- Chocolate sauce, to serve.

Preheat oven to 180°C. Lightly grease 6 x 180ml muffin pans and line the bases with non-stick baking paper. Warm rum in a saucepan over a medium heat. Add raisins and set aside to cool.

Beat butter, brown sugar and vanilla until creamy. Beat in eggs. Stir in the raisin mixture. Fold in cocoa powder, plain flour, self-raising flour and cup milk. Stir in dark chocolate, chopped.

Spoon into pans. Cover with foil. Put in a large baking dish and pour enough boiling water to come halfway up the side. Bake 30-35 minutes. Stand for 5 minutes before turning out. Serve drizzled with chocolate sauce.
