Cheesy leeks à la Oliver
Ingredients
For the leeks
- 2 tbsp olive oil
- 2 large leeks, trimmed and thinly sliced
- 200g Cheddar cheese, grated
- 100g Parmesan cheese, grated
- 100g brie cheese, torn
- 200ml double cream
- 100ml milk
- 1 tsp Dijon mustard
- A few sprigs of fresh thyme, leaves picked

Preheat the oven to 200°C/400°F/gas mark 6.

Heat the olive oil in a large frying pan over medium heat. Add the leeks and cook for 10-15 minutes, or until softened and slightly golden.

In a large bowl, combine the Cheddar, Parmesan and brie cheeses.

Add the cooked leeks to the cheese mixture, along with the double cream, milk, Dijon mustard and thyme leaves. Season to taste.

Pour the mixture into a baking dish and bake for 20-25 minutes, or until golden and bubbly.
