Cheeseburger Sliders Recipe

Ingredients
For the Special Sauce
- 2/3 cup mayonnaise
- 2 tablespoons pickle juice
- 2 tablespoons ketchup
- 1 tablespoon Dijon mustard
For the Sliders and Assembly
- 2 tablespoons vegetable oil
- 1 medium onion, diced
- 2 pounds lean ground beef
- 2 tablespoons Worcestershire sauce
- 2 teaspoons onion powder
- 2 teaspoons garlic powder
- 1 1/2 teaspoons kosher salt, or to taste
- 1 teaspoon freshly ground black pepper
- 24 Hawaiian sweet rolls, such as King's Hawaiian (2 packages)
- Dill pickle slices
- 6 ounces cheese (about 10 American cheese slices or shredded cheddar jack)
For the Topping
- 2 tablespoons melted unsalted butter
- 1 tablespoon sesame seeds, or a blend of sesame and poppy seeds

Gather the ingredients.

Position a rack in the center of the oven and heat to 350 F. Combine the mayonnaise, pickle juice, ketchup, and Dijon mustard in a small bowl. Set aside.

Heat the vegetable oil in a large skillet over medium heat. Add the onion and cook, stirring frequently until softened, about 3 minutes.

Add the ground beef, Worcestershire sauce, onion and garlic powder, and the salt and pepper. Continue to cook, stirring occasionally, until the meat is no longer pink, 5 to 7 minutes.

Remove from the heat. Drain any excess fat. Add the mayonnaise-ketchup sauce and stir to combine. Adjust the seasoning with salt and pepper to taste, if necessary.

Remove the rolls from the package. Without separating into individual rolls, simultaneously slice all 12 rolls in half horizontally. Repeat with the remaining package of 12 rolls.

Place the bottom half of the rolls on a large foil-lined rimmed baking sheet.

Spoon enough of the ground beef mixture over the bottom half of the rolls, covering completely. Top with pickle slices, then a layer of cheese.

Cover the rolls with the top layer of buns. Brush with butter and sprinkle with sesame seeds.

Bake the sliders until they begin to warm through, 7 to 8 minutes. Cover loosely with foil and bake until the sliders are hot and the cheese has melted, 5 to 7 minutes longer.

Let the sliders cool for about 5 minutes. Slice into individual sliders and serve.
