Boiled prawn wontons with chilli dressing
Ingredients
For the wontons
- 200g raw peeled prawns, roughly chopped
- 100g finely chopped spring onions
- 50g finely chopped ginger
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp rice wine vinegar
- 1 red chilli, finely chopped (optional)
- 8 to 10 wonton wrappers
For the chilli dressing
- 2 red chillies, finely chopped
- 2 tbsp rice wine vinegar
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp sugar

To make the wonton filling, place the prawns, spring onions, ginger, soy sauce, sesame oil, rice wine vinegar and chilli (if using) into a bowl and mix well.

Place a teaspoon of filling into the centre of each wonton wrapper.

Moisten the edges of the wrapper with water, then fold over to form a triangle and press to seal.

Bring a large pan of water to the boil, then add the wontons and cook for 4-5 minutes, or until they float to the surface and are cooked through.

Meanwhile, make the chilli dressing by combining the chillies, rice wine vinegar, soy sauce, sesame oil and sugar in a bowl.

Drain the wontons and serve immediately with the chilli dressing.
