Banana Apple Cake
Ingredients
- 125g softened butter
- 1/2 cup caster sugar
- 2 eggs
- 1 medium banana, mashed
- 1 medium fuji apple, grated
- 1 tsp bicarbonate of soda
- 1 1/2 cups self-raising flour
- 1/4 cup milk
- Raw sugar, to sprinkle

Preheat oven to 180C. Grease a loaf tin.

Cream butter and caster sugar until light and fluffy.

Add eggs one at a time, mixing well in between. Stir in mashed banana and apple.

Add half the dry ingredients until combined, then add the bicarb soda, self-raising flour and milk and mix until smooth.

Pour mixture into a greased loaf tin and sprinkle raw sugar over the top.

Bake for 45 minutes or until an inserted skewer comes out clean. Allow to stand in tin for 5 minutes before turning out onto a wire rack to cool.
