Walnut & banana loaf
Ingredients
For the loaf
- 2 ripe bananas
- 100g quality cooking chocolate (70%)
- 150g unsalted butter (at room temperature)
- 80g icing sugar
- 2 large eggs
- 1 level teaspoon bicarbonate of soda
- 1 level teaspoon ground cinnamon
- 2 oranges (zest and juice)
- 200g self-raising flour
- 100g chopped walnuts

Preheat the oven to 170°C/325°F/gas 3.

Spread the walnuts out on a baking tray and toast gently in the oven for 5 minutes, or until fragrant.

Meanwhile, melt the chocolate in a heatproof bowl set over a pan of simmering water (or in the microwave). Leave to cool slightly.

In a separate bowl, cream together the butter and icing sugar until light and fluffy.

Beat in the eggs, one at a time, then stir in the melted chocolate.

Mash the bananas and stir into the mixture, along with the zest and juice of the oranges.

Gently fold in the flour, bicarbonate of soda and cinnamon.

Finally, stir in the toasted walnuts.

Pour the mixture into a lightly greased and floured 20cm loaf tin and bake for 45-55 minutes, or until a skewer inserted into the centre comes out clean.

Leave to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
