Toasted Banana Bread with Chocolate Ricotta
Ingredients
- 2 cups (320g) wholemeal self-raising flour
- 1 tsp bicarbonate of soda
- 1/3 cup (70g) brown sugar
- 100g walnuts, roughly chopped
- 2 eggs, lightly beaten
- 1 cup (250ml) fat reduced milk
- 250g fresh ricotta
- 3 ripe lady finger bananas, mashed
- 2 tbsp finely grated dark chocolate
- Pinch ground cinnamon, to serve
- Honey, to serve

Preheat oven to 180°C. Grease and line a 21cm x 9cm loaf pan. Combine flour, bicarbonate of soda, sugar and walnuts in a bowl.

Mix eggs, milk and banana, add to the dry ingredients. Spoon into pan. Bake for 45 minutes. Slice into 4 x 2cm slices (reserve the rest) and toast under a grill until golden.

Combine the ricotta, chocolate and cinnamon. Place a dollop on the toast. Drizzle with honey.
