The best marinated fish kebabs
Ingredients
For the fish
- 400g firm white fish fillets, skinless and boneless, cut into 2.5cm cubes
- 1 red onion, cut into wedges
- 1 red pepper, deseeded and cut into 2.5cm pieces
- 1 yellow pepper, deseeded and cut into 2.5cm pieces
- 1 courgette, cut into 2.5cm thick slices
- 2 tbsp olive oil
For the marinade
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp sweet paprika
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp chilli powder
- 2 cloves of garlic, crushed

To make the marinade, combine all the ingredients in a bowl and mix well.

Add the fish and vegetables to the marinade, ensuring everything is well coated.

Leave to marinate for at least 30 minutes, or up to 2 hours in the fridge.

Thread the fish and vegetables onto skewers.

Heat a grill or griddle pan over medium-high heat.

Cook the kebabs for 2-3 minutes per side, or until the fish is cooked through and the vegetables are tender.
