Sweet Plum Pork Skewers
Ingredients
Meatballs
- 600g pork mince
- 1/2 cup fresh breadcrumbs, made from day-old bread
- 3 green onions, finely chopped
- 4cm piece ginger, peeled, grated
- 2 garlic cloves, crushed
- 2 makrut lime leaves, finely shredded
- 1/4 cup plum sauce
Salad
- 1 cup coriander leaves
- 1/3 cup mint leaves, torn
- 1 red capsicum, deseeded, sliced
- 2 avocados, peeled, deseeded, sliced crossways
- 2 large vine-ripened tomatoes, cut into thin wedges
- 1 tbsp lemon juice

- olive oil cooking spray

Soak skewers in cold water for 30 minutes.

Place mince, breadcrumbs, onions, ginger, garlic, makrut lime leaves and 2 tablespoons plum sauce in a bowl. Using clean, damp hands, mix until well combined. Shape tablespoons of mixture into balls (you should get 24 balls).

Thread 3 meatballs onto each skewer. Place on a plate. Cover. Refrigerate for 30 minutes.

Preheat a barbecue grill or chargrill on high heat. Reduce heat to medium. Spray meatballs with oil. Cook skewers for 8 minutes, turning and brushing with remaining plum sauce, or until meatballs are cooked through.

Meanwhile, place coriander, mint, capsicum, avocado and tomatoes in a bowl. Drizzle with lemon juice. Toss until well combined. Serve with pork skewers.
