- 1 litre organic chicken or vegetable stock
- 150g fresh spinach
- 200g fresh cheese tortellini
- 2 tbsp extra virgin olive oil
- 1 onion
- 2 cloves of garlic
- 5g fresh basil
Instructions

Heat the olive oil in a large saucepan over medium heat.

Finely chop the onion and garlic, then add to the pan and cook until softened.

Pour in the stock and bring to a boil.

Add the tortellini and cook according to package instructions.

Stir in the spinach and basil, and cook until the spinach has wilted.

Season to taste and serve immediately.
