Spiced Pumpkin Pudding
Ingredients
- 1 can pumpkin puree
- 3/4 cup packed light brown sugar
- 1 1/4 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/2 teaspoon salt
- 1 1/2 teaspoons pure vanilla extract
- 3 large eggs, slightly beaten
- 1 3/4 cups half-and-half, or light cream
- 2 tablespoons frozen whipped topping, optional
- Coarsely chopped pecans, for garnish
- Cinnamon sugar, for garnish

Gather the ingredients.

Heat oven to 350 F. Butter a 1 1/2-quart baking dish.

Combine all ingredients in a large mixing bowl and whisk or beat on low speed until blended.

Pour the pumpkin pudding mixture into the prepared baking dish.

Place the baking dish in a larger pan and add boiling water to a depth of about 1 inch.

Bake for 55 to 65 minutes, or until a knife inserted in the center comes out clean.
