- 1/2 cup oatmeal
- 1/4 cup cottage cheese
- 2 egg whites
- 1/4 cup canned pumpkin
- vanilla
- cinnamon
- pumpkin pie spice
Optional Addition
- 1 tablespoon chocolate/peanut butter swirl chips

Use a mini food processor to blend the oats into a fine flour.

Add the cottage cheese, egg whites, canned pumpkin, vanilla, cinnamon, and pumpkin pie spice to the blended oats.

Process until the batter is smooth and well combined.

Cook the pancake batter on a preheated griddle or non-stick pan over medium heat.

If using, fold in or sprinkle the chocolate/peanut butter swirl chips onto the pancakes while cooking.
