Prawn Shiitake Fried Rice
Ingredients
- 500g green banana prawns
- 2 tbsp peanut oil
- 2 rashers bacon, chopped
- 1 tbsp grated fresh ginger
- 2 cloves garlic, finely chopped
- 1 red onion, thinly sliced
- 100g fresh shiitake mushrooms, thinly sliced
- 4 cups cooked white rice
- 1/4 cup (60ml) kecap manis
- 1/4 cup (60ml) oyster sauce
- 1 bunch chives, roughly chopped
- 4 hard boiled eggs, roughly chopped

Peel and devein prawns.

Heat oil in a wok and stir-fry bacon until lightly browned. Add prawns and stir-fry until changed in colour and cooked through. Remove from wok and keep warm.

Add ginger, garlic, onions and shiitake mushrooms to wok and stirfry for about 30 seconds. Add rice and stir-fry until hot. Return bacon and prawns to wok with kecap manis, oyster sauce, chives and eggs.
