Prawn Noodle Salad
Ingredients
- 3 x 75g pkts Indomie Instant Cup Noodles Mi Goreng
- Olive oil spray
- 500g peeled medium green king prawns, with tails, deveined
- 1 red capsicum, cut into thin strips
- 3 shallots, cut into 7cm lengths, finely shredded
- 1 cup fresh coriander leaves

Prepare noodles following packet directions. Transfer to a large bowl.

Meanwhile, heat a large frying pan or wok over high heat until just smoking. Spray with oil. Stir-fry the prawns for 4-5 minutes or until prawns curl and change colour.

Add the prawns, capsicum, shallot and coriander to the noodles. Toss to combine. Divide among serving bowls.
