Hot and Sour Prawn Soup
Ingredients
- 250g rice stick noodles
- 1 1/2 litres (6 cups) chicken stock
- 1-2 tbsp green curry paste to taste (see related recipe)
- 1 tbsp soy sauce
- 1 tbsp caster sugar
- 1 lime, juiced
- 2 tomatoes, chopped
- 2 celery stalks, sliced
- 20 green prawns (tails intact), peeled
- Chilli, to serve
- Bean sprouts, to serve
- Coriander, to serve
- Mint leaves, to serve

Soak rice stick noodles in boiling water according to packet instructions. Drain and set aside. Place chicken stock, green curry paste to taste, soy sauce, sugar and lime juice in a large pan and bring to the boil. Add tomatoes and celery stalks. Reduce heat to medium-low. Simmer for 5 minutes until tomatoes have softened slightly. Add prawns, then cook for 2-3 minutes until just cooked through. Divide noodles among bowls. Spoon soup and prawns over. Serve with chilli, bean sprouts, coriander and mint leaves.
