Prawn Fajitas
Ingredients
- 8 flour tortillas
- 125g (1/2 cup) sour cream
- 1 tbsp fresh lime juice
- 1 1/2 tbsp coarsely chopped fresh coriander
- 1 tbsp olive oil
- 1 small red onion, halved, thinly sliced
- 1/2 red capsicum, deseeded, thinly sliced
- 1/2 green capsicum, deseeded, thinly sliced
- 200g medium green king prawns, peeled
- 1 large vine-ripened tomato, finely chopped
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp mild paprika
- 1 large avocado, halved, stone removed, peeled, chopped

Preheat oven to 180C. Wrap the tortillas in foil and place in preheated oven for 10 minutes or until heated through. Remove from oven. Combine the sour cream, lime juice and fresh coriander in a small bowl.

Meanwhile, heat half the oil in a large non-stick frying pan over medium-high heat. Add the onion, and red and green capsicum and cook, stirring, for 2-3 minutes or until onion softens. Transfer to a bowl. Heat the remaining oil in the pan over high heat. Add the prawns and cook, tossing, for 1-2 minutes or until prawns curl and change colour.

Add the onion mixture, tomato, cumin, ground coriander and paprika to the prawns and cook, stirring, for 1-2 minutes or until aromatic. Remove from heat.

Divide prawn mixture among tortillas. Top with avocado and a dollop of sour cream mixture. Fold in half or roll up tortillas and serve immediately.
