Prawn coriander rolls
Ingredients
- 750g medium cooked prawns
- 16 rice paper wrappers
- 3 to 4 iceberg lettuce leaves, finely shredded
- 1 Lebanese cucumber, cut into thin strips
- 1 small red capsicum, cut into thin strips
- 1 carrot, peeled, cut into thin strips
- 1 cup coriander leaves
- 1/2 cup sweet chilli sauce
- 2 tbsp fish sauce
- 2 tbsp lime juice

Peel and devein prawns. Set aside.

Make sauce: Combine all ingredients in a small bowl. Set aside.

Fill a shallow dish with warm water. Dip a rice paper wrapper into water for 10 seconds, or until it starts to soften slightly. Lay flat on a clean surface.

Place 3 prawns lengthways onto wrapper. Top with lettuce, cucumber, capsicum, carrot and coriander leaves. Drizzle with a little sauce. Fold edges in and roll up tightly. Place onto a plate. Cover with a damp tea towel. Repeat with remaining wrappers and fillings.

Serve rice paper rolls with remaining dipping sauce.
