Peanut Butter Balls
Ingredients
- 40g butter
- 2 cups (320g) lightly packed brown sugar
- 1 cup (85g) desiccated coconut
- 1 cup (115g) walnuts, finely chopped
- 2/3 cup (180g) no-added-sugar peanut butter
- Desiccated coconut, extra, to coat

Melt the butter in a medium saucepan over low heat. Add the sugar, coconut, walnut and peanut butter and stir until well combined.

Roll 2-teaspoonsful quantities of mixture into balls and place on a plate. Place extra coconut on a plate and lightly roll each ball in the coconut to lightly coat. Place on a plate and cover with plastic wrap. Place in the fridge for 30 minutes or until firm.
