Pan-cooked giant prawns
Ingredients
For the prawns
- 1 kg giant prawns, peeled and deveined
- 1 tbsp olive oil
- 2 garlic cloves, finely sliced
- 1 red chilli, finely sliced (optional)
- 200g snow peas, trimmed
- 200g butter beans, cooked
- 2 tbsp lemon juice
- 2 tbsp chopped parsley

Heat the olive oil in a large frying pan over a medium-high heat.

Add the prawns, garlic and chilli (if using) and cook for 2-3 minutes, until the prawns turn pink and are cooked through.

Add the snow peas and butter beans and cook for a further 2 minutes, until heated through.

Stir in the lemon juice and parsley, then season to taste.
