Paella
Ingredients
For the paella
- 2 tbsp olive oil
- 1 large onion, finely chopped
- 2 cloves of garlic, finely chopped
- 1 red pepper, deseeded and finely chopped
- 400g paella rice
- 1 tsp smoked paprika
- 1 pinch saffron threads
- 1.2 litres hot chicken stock
- 200g chicken thighs, cut into bite-sized pieces
- 200g king prawns, peeled and deveined
- 200g mussels, scrubbed
- 100g frozen peas
- 1 lemon, quartered

Heat the olive oil in a large paella pan over a medium heat. Add the onion and garlic, and cook until softened.

Add the red pepper and cook for another 5 minutes.

Stir in the paella rice, smoked paprika and saffron, and cook for 1 minute.

Pour in the hot chicken stock and bring to a boil. Reduce the heat to low and simmer for 15 minutes.

Add the chicken thighs and cook for another 10 minutes.

Add the king prawns and mussels, and cook until the prawns are pink and the mussels have opened.

Stir in the frozen peas and cook for 2 minutes.

Serve immediately with lemon quarters.
