My favourite paella
Ingredients
For the paella
- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 cloves of garlic, crushed
- 1 red pepper, deseeded and finely chopped
- 400g paella rice
- 1.2 litres hot chicken stock
- 1 tsp smoked paprika
- 1 pinch of saffron threads
- 200g cooked chicken, shredded
- 200g chorizo, sliced
- 200g peeled prawns
- 200g mussels, scrubbed
- 1 lemon, quartered

Heat the olive oil in a large paella pan over medium heat. Add the onion and garlic, and cook until softened.

Add the red pepper and cook for another 5 minutes.

Stir in the paella rice and cook for 1 minute.

Pour in the hot chicken stock, smoked paprika and saffron threads. Bring to a boil, then reduce heat and simmer for 15 minutes.

Add the chicken and chorizo, and cook for another 5 minutes.

Add the prawns and mussels, and cook until the prawns are pink and the mussels have opened.

Serve immediately with lemon quarters.
