Orange Poppy Seed Friands
Ingredients
- Melted butter, for greasing
- 75g (1/2 cup) plain flour
- 270g (1 2/3 cups) icing sugar mixture
- 150g (1 1/2 cups) almond meal
- 2 tbsp poppy seeds
- 1 large orange, rind finely grated
- 5 egg whites
- 180g butter, melted, cooled
- 90g (1/4 cup) orange marmalade

Preheat oven to 200°C. Brush 10 friand pans with the melted butter, to grease, and place on a baking tray.

Sift the flour and icing sugar into a large mixing bowl. Stir in the almond meal, poppy seeds and orange rind.

Use electric beaters or a hand whisk to lightly whisk the egg whites in a large mixing bowl until frothy but not firm. Use a large metal spoon to fold the egg whites into the dry ingredients. Add the melted butter and stir until just combined.

Spoon the mixture into the prepared pans to fill 3/4 full. Bake in preheated oven for 25 minutes or until golden and a skewer inserted in the centre comes out clean. Stand the friands in the pans for 5 minutes before turning onto a wire rack.

Place the orange marmalade in a small saucepan and gently warm over low heat, stirring occasionally, until melted. Brush the tops of the warm friands with the warm marmalade and allow to cool.
