Orange Poppy Seed Friands
Ingredients
- Oil, to grease
- 180g butter, chopped
- 1/2 cup (75g) plain flour
- 1 1/2 cups (185g) icing sugar mixture
- 3 oranges
- 150g Lucky almond meal
- 3 tbsp poppy seeds
- 5 egg whites
- 1/2 cup (110g) caster sugar

Preheat oven to 200°C. Lightly oil 10 friand pans. Melt the butter in a saucepan over a medium-low heat, then simmer for 5 minutes until golden brown (take care not to burn). Cool slightly.

Finely grate the rind from 2 of the oranges. Combine the flour, icing sugar, the rind, almond meal and poppy seeds.

Whisk the egg whites until frothy. Add to the dry ingredients, with the butter. Stir until just combined. Spoon into the pans. Bake for 25 minutes or until a skewer inserted in the centre comes out clean.

Peel the rind from the remaining orange, then cut into thin strips. Juice the oranges. Combine the caster sugar and 3/4 cup (185ml) of the juice in a small saucepan. Stir over a low heat until dissolved. Add the rind and bring to the boil. Simmer for 10 minutes or until syrupy.

Place the friands on a wire rack. Drizzle with the syrup.
