One-pot Peanut Satay Udon

- Marion's Kitchen Thai Satay Chicken Kit
- 200g minced pork
- ½ cup frozen corn
- 1 tbsp paprika
- 2 x 200g udon noodles
- 4 cups water
- 2 tbsp chicken bouillon powder
- 2 tbsp soy sauce
- 1 boiled egg, cut in half
- Shiso leaf (or spring onion), to serve (optional)

Heat a saucepan or pot over medium heat and add the satay marinade from the kit and minced pork. Stir-fry until the pork is cooked through, then add the paprika and frozen corn. Stir until everything is combined, then set aside to rest.

In a saucepan or pot, bring 4 cups of water to a boil over high heat. Once boiling, add the soy sauce, chicken bouillon powder, and Marion's Kitchen Thai Satay sauce. Stir to combine and bring it back to a boil.

To serve, place the cooked udon noodles into a bowl, then ladle over the hot soup mixture. Top with the pork and corn mixture, followed by the boiled egg halves and fresh shiso leaves (or spring onion).
