Oat biscuits with vintage cheddar & quince paste
Ingredients
- 1 cup (90g) rolled oats
- 1/2 cup (75g) wholemeal plain flour
- 1/4 tsp baking powder
- 25g butter
- 1/3 cup finely grated parmesan
- Pinch salt
- 1/2 cup (125ml) buttermilk
- Plain flour for dusting
- 120g tub South Cape Quince paste
- 235g block vintage cheddar

Place oats, flour, baking powder, butter, parmesan and salt in food processor and process until well combined. Add buttermilk and process until mixture just comes together into soft sticky dough. Wrap dough in plastic and allow resting for 1/2 hour.

Preheat oven to 200°C and line two baking trays with baking paper. Roll dough on a well floured surface, until it is about 5mm thick. Use a 5cm cutter to cut rounds from dough and arrange them, quite close together (they will not spread), on prepared trays. Cook for about 20 minutes, or until crisp. Cool on wire racks.

Spread a little quince paste on each biscuit and top with thin slices of cheese, serve immediately. Alternatively serve biscuits, paste and cheese on a platter and allow people to help themselves.
