Mushrooms with pumpkin, lime and pengkat
Ingredients
- 500g piece butternut pumpkin, unpeeled, deseeded
- 3 garlic cloves, crushed
- 4cm piece fresh ginger, peeled, finely shredded
- 1 1/2 tsp finely grated lime rind
- 2 tbsp fresh lime juice
- Salt & ground black pepper, to taste
- 32 Swiss brown mushrooms, stalks removed

Place pumpkin in a steamer over a large saucepan of boiling water. Cover and steam for 20-25 minutes or until tender. Cool for 15 minutes. Scoop out flesh into a bowl and mash until smooth. Add garlic, ginger, lime rind, lime juice, salt and pepper. Mix until well combined.

Spoon pumpkin mixture into centre of mushrooms and place on a baking tray.

Preheat grill to high. Place mushrooms under preheated grill and cook for 3 minutes or until warmed through. Serve immediately.
