Mini Portuguese Meatballs with Spicy Apple Dipping Sauce
Ingredients
Meatballs
- 3 chorizo sausages, chopped (see notes)
- 250g medium green prawns, peeled
- 1 egg, lightly beaten
- 1 tsp lemon rind, finely grated
- 2 cups panko breadcrumbs (see notes)
- 1/2 small red capsicum, finely chopped
- 3 green onions, trimmed, finely chopped
- Extra virgin olive oil, for shallow frying
Dipping Sauce
- 2 x 140g tubs apple puree
- 1 tsp piri-piri seasoning

Using a food processor, process chorizo and prawns until finely chopped. Add egg, rind and 1/2 cup breadcrumbs. Process until combined. Stir in capsicum and 1/2 the onion. Season with salt and pepper. Roll 2 level teaspoons of chorizo mixture into balls. Place remaining breadcrumbs on a plate. Roll meatballs in breadcrumbs to coat.

Pour enough oil into a large frying pan to cover the base. Heat over medium heat. Cook meatballs, in batches, turning, for 2 to 3 minutes or until browned and cooked through. Drain on paper towel.

Combine puree, piri-piri and remaining onion in a saucepan over medium-high heat. Bring to the boil. Reduce heat to low. Simmer for 2 to 3 minutes or until thickened.

Serve meatballs with dipping sauce.
