Loaded Banana Oat Bread
Ingredients
- 2 bananas ripe
- 2 eggs
- ½ cup Greek yoghurt
- 1 tsp vanilla essence
- ¼ cup white sugar
- ¼ cup brown sugar
- ¾ cup oats quick
- 1 ¼ cup self raising flour
- 1 tsp cinnamon
- ⅓ cup granola
- ¼ cup walnuts crushed
- ¼ tsp salt

Pre-heat your oven to 180°C / 360°F (fan forced).

Moosh your 2 bananas in a large bowl, then fork in your 2 eggs, giving them a quick whisk.

Pour in the ½ cup Greek yoghurt, 1 tsp vanilla essence, ¼ cup white sugar and ¼ cup brown sugar. Mix it together roughly.

Now it's time to stir in your ¾ cup oats, then add in the 1 ¼ cup self raising flour, 1 tsp cinnamon, ⅓ cup granola, ¼ cup walnuts and ¼ tsp salt. Combine well into a batter then pour out into your lined baking dish.

Smooth out the surface, sprinkle with optional extra granola and optionally slice a curve in the top of the bread to help the cake rise just like when baking savoury bread.

Get that bread in the oven and bake for around 50-55 mins, or until a toothpick comes out clean.
