Hot Baked Banana Parcels
Ingredients
For the parcels
- 50g (2 1/2 tbsp) butter, at room temperature
- 60g (1/3 cup, lightly packed) brown sugar
- 80mls (1/3 cup) white rum
- 1 tsp ground cinnamon
- 4 ripe bananas
- 35g (1/3 cup) flaked almonds, toasted
- Vanilla ice-cream, to serve

Preheat oven to 200°C. Cut four 30cm square pieces of banana leaves. Bring a large saucepan of water to the boil over high heat. Add the banana leaves and boil for 30 seconds. Drain and place flat on a bench.

Use electric beaters to beat the butter and brown sugar in a small mixing bowl until pale and creamy. Add the rum and cinnamon and stir to combine (the mixture will curdle).

Peel bananas and cut diagonally into 1cm-thick slices. Divide the bananas among the banana leaves. Spoon the rum mixture over the bananas and then sprinkle with the almonds. Fold the banana leaves to enclose banana mixture and form parcels. Tie with wet unwaxed string.

Place parcels on a large baking tray and bake in preheated oven for 15-20 minutes or until hot. Open parcels and serve bananas with ice-cream.
