Grilled Bruschetta Chicken Caprese

Ingredients
For Chicken
- 1 cup balsamic vinegar
- 2 tablespoons honey
- 4 boneless skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon Italian Seasoning
- 4 slices whole milk mozzarella
For Caprese Bruschetta
- 3 roma tomatoes (diced)
- 1/4 cup fresh basil (chopped)
- 1/2 cup fresh mozzarella (chopped (I used Pearl size))
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon garlic powder
- 2 tablespoons balsamic vinegar

Heat grill to High Heat (be sure you've properly seasoned your grill before starting). Place a medium saucepan on the grill and add the 1 cup balsamic vinegar plus the honey to the saucepan and stir to combine. Bring to a boil and then reduce heat to medium/low. Cook for 10-20 minutes or until Balsamic Reduction is thickened to your liking. Set aside. Increase grill heat back up to Medium/High.

Add chicken breasts to a large bowl. Sprinkle with olive oil, salt, pepper, garlic powder, and Italian seasoning. Toss to combine and coat the chicken.

Place chicken breasts on the grill top side down and brush liberally with the balsamic reduction. Cover and cook for 6-7 minutes. Flip chicken, brushing the other side with more Balsamic Reduction. Cover and cook an additional 5-6 minutes or until chicken reaches an internal temperature of 165F.

Top each chicken breast with one slice whole milk mozzarella. Cover and cook for 1-2 more minutes or until cheese has melted. Transfer to a larger platter and spoon the caprese bruschetta over the chicken. Serve immediately and enjoy!

For the Caprese Bruschetta

In a medium bowl, stir together all the ingredients for the Caprese Bruschetta. Keep in the fridge until the chicken is done and then spoon over chicken (see above).
