French toast with strawberries, blackberries & sweet mascarpone
Ingredients
- 1 x 250g pkt mascarpone
- 45g (1/4 cup) icing sugar mixture, sifted
- 250g (1 punnet) strawberries, washed, hulled, larger ones cut in half
- 200g (1 punnet) blackberries
- 180ml (3/4 cup) milk
- 2 eggs, lightly whisked
- 80g butter, chopped
- 6 thick slices crusty white bread
- 2 tbsp caster sugar

Combine mascarpone and icing sugar in a medium bowl. Cover with plastic wrap and place in the fridge until required.

Combine strawberries and blackberries in a large bowl. Set aside until required.

Place the milk in a large bowl. Add the eggs and whisk with a fork until combined.

Melt half the butter in a large non-stick frying pan over medium-high heat until foaming. Dip pieces of bread, 1 at a time, in egg mixture and place in pan. Cook, 3 pieces at a time, for 2 minutes each side or until golden brown. Transfer to a plate. Repeat with remaining butter, bread and egg mixture.

To serve, place bread on serving plates and sprinkle with sugar. Top with a dollop of mascarpone and berries.
