Four-grain coconut porridge with autumnal fruit
Ingredients
For the porridge
- 100g oats
- 50g quinoa
- 50g millet
- 50g buckwheat
- 1 vanilla pod
- 700ml coconut milk
- pinch of sea salt
To serve
- 2 tbsp chia seeds
- 50g hazelnuts
- 200g mixed fruit (such as apples, pears, plums, blackberries)

Combine the oats, quinoa, millet, buckwheat, vanilla pod and coconut milk in a saucepan.

Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until the grains are tender and the porridge has thickened, stirring occasionally.

Remove the vanilla pod.

Toast the hazelnuts in a dry pan for 5-7 minutes, or until golden and fragrant.

Roughly chop the hazelnuts.

Serve the porridge with chia seeds, toasted hazelnuts and mixed fruit.
