Easy Provencal Fish
Ingredients
- 1 tablespoon extra-virgin olive oil
- 1 bell pepper, red, yellow, or green, cored, seeded, and sliced into 1/2-inch strips
- 1 medium sweet onion, halved and sliced into 1/2-inch strips
- 10 cloves garlic, peeled
- 2 cups canned crushed tomatoes
- 12 kalamata, or Nicoise olives
- 1/2 teaspoon Caribbean seasoning blend, or lemon pepper
- 4 (5-ounce) cod fillets
- Kosher salt, to taste
- Freshly ground black pepper, to taste
Instructions
- 1
Gather the ingredients.
- 2
In a saute pan over medium-low heat, heat the oil until hot, then add bell peppers, onions, and whole garlic cloves; cook until the vegetables are tender, about 5 minutes.
- 3
Add crushed tomatoes, olives, and seasoning. Continue cooking until garlic cloves are easily pierced with a fork, about 5 minutes. If mixture becomes dry, add 1 tablespoon of water at a time, as needed.
- 4
Increase the heat to medium. Add the fish fillets to the pan, spooning the sauce over top. Saute until cod is cooked through and flakes easily with a fork, 5 to 7 minutes. Season to taste with salt and pepper.
- 5
Serve cod filets with the Provencal sauce over the top.
