- 4 boneless, skinless chicken breasts
- 4 cloves garlic (minced)
- 1 tsp Italian seasoning (store-bought or homemade)
- Kosher salt and freshly ground black pepper (to taste)
- 8.5 oz. sun dried tomatoes (drained and chopped (1 jar))
- ½ cup low-sodium chicken stock
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- 1 cup baby spinach (chopped)
- fresh parsley or basil (optional, for garnish)
