Classic Southern Smothered Pork Chops
Ingredients
Pork Chops
- 4 large pork chops, 1 1/2 inches thick (about 2 pounds)
- 1 teaspoon poultry seasoning
- Salt, to taste
- Freshly ground black pepper, to taste
Gravy
- 2 tablespoons vegetable oil
- 1 tablespoon unsalted butter
- 1 large yellow onion, sliced
- 4 cloves garlic, finely minced
- 1 tablespoon all-purpose flour
- 1 1/2 cups chicken broth
- 1/4 cup buttermilk
- 1/4 cup water

- 4 cups cooked white rice

Season the pork chops with poultry seasoning, salt, and pepper.

Heat the vegetable oil and butter in a large skillet over medium-high heat.

Add the pork chops to the skillet and cook for 3-4 minutes per side, or until browned.

Remove the pork chops from the skillet and set aside.

Add the onion to the skillet and cook until softened, about 5-7 minutes.

Add the garlic and cook for 1 minute more.

Sprinkle the flour over the onion and garlic and cook for 1 minute, stirring constantly.

Gradually whisk in the chicken broth and buttermilk until smooth.

Bring to a simmer and cook for 5 minutes, or until the gravy has thickened.

Return the pork chops to the skillet and cover with the gravy.

Turn the heat to low and let the onion gravy gently simmer for 15 minutes.
