Chorizo Cherry Tomato Fettuccine
Ingredients
- 600g chorizo sausages
- 2 tsp olive oil
- 1 brown onion, finely chopped
- 3 garlic cloves, crushed
- 200g cherry tomatoes, halved
- 690g tomato pasta sauce
- 2 tbsp chopped fresh continental parsley
- 500g fettuccine
- 2 tbsp fresh basil leaves
- Grated parmesan, to serve

Remove the skin from the sausages and roll sausages into small balls. Heat oil in a non-stick frying pan over medium-high heat. Cook the meatballs, turning often, for 4-5 minutes or until golden. Transfer to a plate.

Add the onion and garlic to the pan and stir for 3-4 minutes or until onion is light golden. Add tomato. Cook, stirring often, for a further 4-5 minutes or until tomato starts to collapse. Add the pasta sauce. Bring to a simmer. Reduce heat to medium-low. Cook, stirring often, for 15 minutes or until the sauce has thickened slightly. Stir in the meatballs. Simmer for 5 minutes or until meatballs are cooked through. Stir in the parsley.

Meanwhile, cook pasta in a saucepan of salted boiling water until al dente. Drain and return to the saucepan.

Add meatball sauce to pasta. Toss to combine. Top with basil and parmesan.
