Chocolate chip hotcakes
Ingredients
Chocolate chip hotcakes
- 2 cups self-raising flour
- 2 tbsp Cadbury Bournville Cocoa
- 1/4 tsp bicarbonate of soda
- 1/3 cup caster sugar
- 1 1/2 cups milk
- 1 egg
- 2 tsp vanilla extract
- 25g butter, melted
- 3/4 cup Cadbury Milk Chocolate Baking Chips
Glossy Chocolate Sauce
- 125g Cadbury Dark Chocolate Melts
- 60g unsalted butter
- 1/4 cup cream
- 2 tbsp honey

Sift together the dry ingredients into a large bowl. In a separate bowl whisk together milk, eggs and vanilla until smooth. Pour into flour mixture and just whisk until combined.

Heat a large non stick frypan over moderate heat then brush with a little butter. Spoon ¼ cup amounts of batter into the pan and sprinkle each with chocolate chips. Cook hotcakes for 1-2 minutes each side or until golden and puffed. Transfer to a baking tray and keep warm in oven. Cook remaining hotcakes to make 12, brushing pan with butter for each batch.

Serve the hotcakes in stacks with a scoop of ice cream and fresh fruit with a drizzle of Glossy Chocolate Sauce.

For the Glossy chocolate Sauce: Combine dark chocolate, butter, cream and honey in a saucepan and gently heat, stirring occasionally until smooth. Set aside to cool slightly before use.
