Chicken Scaloppini with Ham and Spinach

- 1 bunch English spinach, trimmed, washed
- Olive oil spray
- 2 x 200g chicken breast fillets, halved horizontally
- 400g can diced tomato (no added salt)
- 1 garlic clove, crushed
- 1/2 tsp dried oregano
- 2 slices (80g) premium lite leg ham, halved
- 80g Mil Lel Light grated mozzarella

Heat a frying pan over a high heat. Add wet spinach. Cook for 1 minute until wilted. Remove and set a side. Spray the pan with oil. Cook chicken for 2 minutes each side or until golden.

Preheat oven to 180°C. Pour the tomato into a 2 litre oven proof dish. Stir through garlic an d oregano and spread over base of dish.

Place the chicken in a single layer on top of the tomato mixture. Place a slice of ham on top, tucking in the edges neatly. Top with the spinach, then mozzarella. Bake for 15-20 minutes until the cheese has melted. Season with pepper.
